- 3 avocados, diced
- 1 package of almond milk soft cheese
- 1 red bell pepper, diced
- 1/2 – 1 english cucumber, diced
- 1/4 red onion, minced
- 2 tablespoons olive oil
- juice of 1 lemon
- 2 tablespoons chopped fresh parsley
- hefty pinch of salt and pepper
- Place all ingredients in a bowl.
- Eat with chips, veggies or just a damn spoon!
