1. Chipotle Lettuce Wraps

Prep Time: 10 mins
Cook Time 10 mins
Serves: 3-4

Ingredients

  • 2 tablespoons ghee
  • 2 pounds lamb loin chops
  • salt, to taste

For the pesto

  • 1 1/2 cup packed arugula
  • 1/2 cup mint leaves
  • 1/2 cup pistachios
  • 1 teaspoon lemon juice
  • 2 garlic cloves
  • salt, to taste
  • 1/2 cup Kasandrinos Olive Oil
  • black pepper, to garnish

Directions

  1. Place a large cast iron skillet over medium-high heat. Add ghee, sprinkle salt on both sides of lamb loin chops and cook for 4-5 minutes per side. Set aside and cover with foil.
  2. While loin chops rest, place all pesto ingredients in a food processor, except for the olive oil.
  3. Pulse until combine then turn on food processor and slowly pour in Kasandrino’s Olive Oil in until preferred texture. If you want more chunky, use less olive oil. For smoother consistency, use more olive oil.
  4. Top lamb loin chops off with pesto and sprinkle with a bit of black pepper.

2. Garlic Lime Shrimp Skewers

Prep Time: 10 mins
Cook Time 4 mins
Serves: 4 skewers

Ingredients

  • 1 pound wild caught shrimp (20 count), uncooked, deveined, peeled, with tails left on
  • 1/4 cup olive oil
  • zest of 2 limes
  • juice of 2 limes
  • 3 garlic cloves, minced
  • 2 teaspoon red pepper flakes
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon sweet paprika
  • salt and pepper, to taste
  • chopped cilantro, for garnish

Directions

  1. Place shrimp in a dish in one layer.
  2. Whisk together all the rest of the ingredients (except for the cilantro) then pour mixture over the shrimp. Cover and place in fridge to marinate for 3+ hours.
  3. Place 5 shrimp on 4 metal skewers then heat grill or grill pan to a medium-high heat and grease to keep the shrimp from sticking.
  4. Once grill is hot, place skewers on grill then use a basting brush to baste the shrimp in the marinating liquid while they cook. Cook for 2 minutes per sides, until pink and tender.
  5. Squeeze fresh lime juice on top and garnish with cilantro!
